Vegan & Paleo “yoghurt”, breakfast recipe

This is hands down the easiest, yummiest, filling and super healthy quick breakfast in the world to make! It takes less than 2 minutes to make! Vegan and Paleo “yoghurt”? Mix: 1 banana ? 1 avocado ? Juice from 1 lime Done! Serve with nuts, seeds, berries and your favourite morning beverage! Who said living a healthy life is complicated eh ?? Enjoy your day!??

Muffins!

Banana, Date and Walnut Muffins, yum! I made these muffins yesterday for breakfast and filled up the freezer for the week to come. Yet, these are also great next to your coffee, as an office snack, before or after training, anytime actually. I have chosen to go all plantbased, but that does not mean you have to. If you go for the not plant based version just remove the plantbased milk and chia-eggs from the ingredient list below and use 3 eggs. My choice to go entirely plant based is health, animal welfare and environmentally related, all in equal portions. Vegan oven pancakes

“Just trust the process”. “Be open to everything”. Yes, this morning was one of those mornings that those two expressions made me look wider than what was in front of me and to my eyes in that moment wasn’t working. I was about to make these totally yummy almond butter bars for breakfast. I had about 30 minutes and a busy day ahead. Getting the recipe out, starting with adding the chia seeds to the water for the “chia eggs”, then switching on the oven while I was sipping my freshly made matcha oat milk latte I could hardly wait to taste these yummy bars after meditation. You see, that was the plan – let the almond butter bars bake in the oven as I was in my morning meditation. The third ingredient on the list was apple puree. New lesson / nieuwe les – Yoga en hormonetherapie

Yoga en hormonetherapie  De tijd met hormonetherapie is vaak overweldigend. Je komt naar huis met en waslijst van potentiële bijwerkingen na je eerste bezoek bij de verpleging oncologië over die informatie van de hormonetherapie. Hun hebben daar ook goed uitgelegd dat sommige geen een bijwerking voelen, anderen heelveel en alles tussenin – je weet dus heelemaal niet wat je wel of niet mee gaat maken. Deze lessen zijn gericht op het versterken van alles wat de hormonetherapie zoude kunnen verzwakken – fysiek, mentaal een geestelijk. Er is heelveel die wij zelf kunnen doen om sterk door deze perioede te gaan en ook sterk daar uit te komen. Het enige is dat het ons vaak niet wordt verteld. Tot nu toe ;-). In deze lessen leren wij ook wat wij dagelijks zelf  t´huis kunnen doen om alles zo soepel mogelijk voor onszelf te laten lopen. Chocolate breakfast muffins

I made these muffins Saturday – orginially from a recipe from a Dutch Paleo magazine –  , posting pics on Instagram as I was baking along. Many of you have contacted me via DM on Instagram, Facebook Messenger, What´s App and more for the recipe the past few days, so instead of typing it out a zillion of times I thought I´d share it here ;-). You need; 250 gr almond butter 2 eggs (for a vegan version, soak 30 gr of chiaseed in 3 dl of water for 15 minutes and use the whole “gunk” instead of eggs) 3 tbspns raw cacao powder 1 tspn vanilla powder 3 ripe bananas 1,5 tspn baking powder 100 gr of 90 – 100 % dark chocolate, chopped up   How to; Heat the oven to 200 degrees centigrade. Add all the ingredients, aside from the dark choclate, and mix them in your kitchen machine or hand held mixer. Stir in the chopped up chocolate. Breakfast ginger banana smoothie

Some days all you want to do is have a very quick breakfast and quite often for me that is when a smoothie or a chia pudding comes in to play. This smoothie is not just filling and yummy, you can also make extra and have it as one of your snacks later during the day. And it is the perfect post training snack as well. Just throw all of this in the blender; 2 bananas 1,5 dl water 1 tspn cinnamon fresh ginger, as much or as little as you´d like 200 gr strawberries (or any other berries ;-), it is strawberry season here right now, so….) 1,5 dl oat, soya or almond milk 2 tspns soy or rice protein powder   Swish! Enjoy!  

Quick, easy, yummy healthy breakfast / snack

Sometimes we just need to get some “grubb” like we call it in Sweden in really fast. This is one of my favourite Yummy, Fun and Healthy breakfasts and snacks. There are even times when I am guilty of having a double portion of this for lunch as well, when time feels really scarce. What you do is basically to mix this together; 200 or 250 grams of cottage cheese handful of nuts pinch of cinnamon huge serving of your favourite berries or fruit, or whatever berries or fruit you have in your house 😉 Enjoy!

Waffles!

Waffles to me is one of the most Swedish dishes ever. Waffles instantly make me think of my grandmother´s kitchen, cold winter days in the snow  with friends and once we were cold to the bone after hours of pulka rides and snowball fights, arriving at grandma´s for freshly made waffles with jam and whipped cream. Waffles takes me back to days on the ski slopes in Sälen , stopping by the “Våffelstuga” – literally translated “the waffle hut” – to fill up with energy through , you guessed it , waffles , whipped cream and jam. Since then I found out –  8 years ago –  that I am allergic to gluten, plus I have cut out sugar entirely of my diet and dairy products rarely enter our household. Every time my friend Stina posts her healthy waffles she makes in the mornings on Instagram and Facebook I get instant home-sickness mixed with this urgent need to have waffles – which a has been going on for at least 3 years :-). Sunday we held our 3rd seminar / Health Food Brunch in the Yummy, Fun And Healthy Living seminar series at MICA´s Coffee bar in Haarlem –  us being Stephanie from Appetit Voyage and me. We would like to thank all of you who attended as well as Annemarie and Sophie for another morning of amazing food, drinks and atmosphere at their beautiful coffee bar. The main idea behind these Health Food Brunches and Seminars is that people get together , bringing any questions they could possibly have when it comes to food, nutrition and health and we are there to answer them all. We start the morning off with a theme to get the conversations and questions going, while staying open to being flexible to what the need is of the participants. This time the kick off topic was ”Food & Mood”.
