Muffins!

Banana, Date and Walnut Muffins, yum! I made these muffins yesterday for breakfast and filled up the freezer for the week to come. Yet, these are also great next to your coffee, as an office snack, before or after training, anytime actually. I have chosen to go all plantbased, but that does not mean you have to. If you go for the not plant based version just remove the plantbased milk and chia-eggs from the ingredient list below and use 3 eggs. My choice to go entirely plant based is health, animal welfare and environmentally related, all in equal portions. Breakfast or snack smoothie – Banana Almond

Smoothies are some or the easiest and fastest things to make for breakfast and / or snacks. Totally some of my favourites as you can either choose to sit down and enjoy your smoothie while just breathing and just being, as well as when you have one of those mornings or days when you just can’t get to take a longer breakfast or break you can have your smoothie while working. Just throw the following in the blender and mix!   1 frozen banana 1,5 cups vegan 🌱 milk 🥛 1 tbspn almond butter 1 tbspn chia seeds 2 dates 1 tspn wheatgrass powder (optional) 1 tspn rosehip powder (optional) A few ice cubes Enjoy!  

Vegan oven pancakes

“Just trust the process”. “Be open to everything”. Yes, this morning was one of those mornings that those two expressions made me look wider than what was in front of me and to my eyes in that moment wasn’t working. I was about to make these totally yummy almond butter bars for breakfast. I had about 30 minutes and a busy day ahead. Getting the recipe out, starting with adding the chia seeds to the water for the “chia eggs”, then switching on the oven while I was sipping my freshly made matcha oat milk latte I could hardly wait to taste these yummy bars after meditation. You see, that was the plan – let the almond butter bars bake in the oven as I was in my morning meditation. The third ingredient on the list was apple puree. Yummiest and healthiest bread ever

Overnight buckwheat porridge

I am trying out so many different overnight puddings, overnight oats, overnight buckwheat recipes lately and they are all so yummy that I find myself superstoked about these breakfasts. What more do you need than a breakfast which takes less than 3 minutes to prepare when you get up in the morning, a breakfast which is yummy, healthy, good for you and good for the planet simultanously and guarantees that you are full for at least 3 – 4 hours? When my alarm goes off in the morning, I don’t think I need anything else in that moment ;-). So here’s today’s version of the overnight buckwheat porridge. It is for one portion, but I usually make more and put the rest in the fridge for the coming 2 mornings as well. Yoga, Hiking and Midnight Sun

It’s an honour to welcome you to our yoga and hiking trips in the pristine, untouched nature of Swedish Southern Lapland at Helags Fjällstation/Mountain Station during the summer of 2019. We have been arranging these trips since 2015 and thoroughly enjoy it. The air, the nature, the mountain, the fresh water you can drink out of the creeks, the colours of the summer flowers and greens, the view of the glacier, the reindeer walking through the Mountain Station, it’s all breathtaking and healing at the same time. No previous experience of hiking or yoga necessary! We will be staying together at the Mountain Station with full board, enjoying two yoga sessions per day during the morning and the evening. There will also be a seminar on the theme “Holistic Health” including nutritional advice during the weekend. We will gather at Emma Britas Cafe in Börtnan Thursday morning for brunch together and an introduction of the program for the weekend. You will be able to make a good picnic from all the food on the buffet …

Summer breakfast

This summery morning I made one of my favourite breakfasts. OK, I confess, I make this one in winter as well, but this time of the year it just seems to taste better. Like the sunshine enhances all about this Strawberry Soup… It is fast and easy to make,  tastes yum and leaves you really happy from the inside. All you need is; 200 – 225 grams of strawberries 2 dl of coconut milk 2 teaspoons manuka honey some fresh mint   You just toss the strawberries, coconut milk and manuka honey in the mixer and mix it all together. Pour it in a soup bowl. Add some fresh mint to garnish. Enjoy! You can of course supplement the strawberries for any other berries you´d like. Go ahead and be as creative as you wish! <3    

Chocolate breakfast muffins

I made these muffins Saturday – orginially from a recipe from a Dutch Paleo magazine –  , posting pics on Instagram as I was baking along. Many of you have contacted me via DM on Instagram, Facebook Messenger, What´s App and more for the recipe the past few days, so instead of typing it out a zillion of times I thought I´d share it here ;-). You need; 250 gr almond butter 2 eggs (for a vegan version, soak 30 gr of chiaseed in 3 dl of water for 15 minutes and use the whole “gunk” instead of eggs) 3 tbspns raw cacao powder 1 tspn vanilla powder 3 ripe bananas 1,5 tspn baking powder 100 gr of 90 – 100 % dark chocolate, chopped up   How to; Heat the oven to 200 degrees centigrade. Add all the ingredients, aside from the dark choclate, and mix them in your kitchen machine or hand held mixer. Stir in the chopped up chocolate. Breakfast ginger banana smoothie

Some days all you want to do is have a very quick breakfast and quite often for me that is when a smoothie or a chia pudding comes in to play. This smoothie is not just filling and yummy, you can also make extra and have it as one of your snacks later during the day. And it is the perfect post training snack as well. Just throw all of this in the blender; 2 bananas 1,5 dl water 1 tspn cinnamon fresh ginger, as much or as little as you´d like 200 gr strawberries (or any other berries ;-), it is strawberry season here right now, so….) 1,5 dl oat, soya or almond milk 2 tspns soy or rice protein powder   Swish! Enjoy!  

Mind Detox

Detox is a word which has become almost as common as the word “Iphone” in our every day lingo. Even though we might not know all the exact down-to-the-nano-particle-of-certain-molecules-or-cells-details-and-functions of neither the word “Detox” nor the word “Iphone” , we are all aware that both words are necessary for our survival ( ? ). Or at least we know that one is – the other we most likely feel like it would be pretty difficult to survive without. Well aware of the fact that Detoxification is the process in our bodies which rids our system of toxins we have become more and more picky about what we put in our mouths, on our skin, the quality of the air which we breathe in and more. But what about the things we let in to our minds through the gateways of our senses? And what about the stuff that comes out of our mouths as we speak?
