Summer breakfast

This summery morning I made one of my favourite breakfasts. OK, I confess, I make this one in winter as well, but this time of the year it just seems to taste better. Like the sunshine enhances all about this Strawberry Soup… It is fast and easy to make,  tastes yum and leaves you really happy from the inside. All you need is; 200 – 225 grams of strawberries 2 dl of coconut milk 2 teaspoons manuka honey some fresh mint   You just toss the strawberries, coconut milk and manuka honey in the mixer and mix it all together. Pour it in a soup bowl. Add some fresh mint to garnish. Enjoy! You can of course supplement the strawberries for any other berries you´d like. Go ahead and be as creative as you wish! <3    

Waffles!

Waffles to me is one of the most Swedish dishes ever. Waffles instantly make me think of my grandmother´s kitchen, cold winter days in the snow  with friends and once we were cold to the bone after hours of pulka rides and snowball fights, arriving at grandma´s for freshly made waffles with jam and whipped cream. Waffles takes me back to days on the ski slopes in Sälen , stopping by the “Våffelstuga” – literally translated “the waffle hut” – to fill up with energy through , you guessed it , waffles , whipped cream and jam. Since then I found out –  8 years ago –  that I am allergic to gluten, plus I have cut out sugar entirely of my diet and dairy products rarely enter our household. Every time my friend Stina posts her healthy waffles she makes in the mornings on Instagram and Facebook I get instant home-sickness mixed with this urgent need to have waffles – which a has been going on for at least 3 years :-). Chia Pudding

Chiapudding – yummy recipe

I have to admit that the first time I had a go at making the now oh-so-trendy Chia Pudding for the first time, the result was the same as that initial sip of shampoo you get down your throat as a kid when you don´t listen to your mum asking you to keep your eyes and mouth closed as she is washing your hair (aged 3 or so 😉 🙂 ). Totally not yum, or anything close to it. So I stayed off making any of these the-worlds-easiest-and-fastest-plus-superhealthy breakfasts for almost a year, savouring the tasty one´s I could get in cafés in Östersund, Göteborg, Köbenhavn, Haarlem, Heemstede, Amsterdam… Then a few weeks ago this recipe landed in our shopping cart – can´t remember if it was from Dekamarkt or AH, but anyway – it´s totally yum!
