Vegan oven pancakes

“Just trust the process”. “Be open to everything”. Yes, this morning was one of those mornings that those two expressions made me look wider than what was in front of me and to my eyes in that moment wasn’t working. I was about to make these totally yummy almond butter bars for breakfast. I had about 30 minutes and a busy day ahead. Getting the recipe out, starting with adding the chia seeds to the water for the “chia eggs”, then switching on the oven while I was sipping my freshly made matcha oat milk latte I could hardly wait to taste these yummy bars after meditation. You see, that was the plan – let the almond butter bars bake in the oven as I was in my morning meditation. The third ingredient on the list was apple puree. Breakfast ginger banana smoothie

Some days all you want to do is have a very quick breakfast and quite often for me that is when a smoothie or a chia pudding comes in to play. This smoothie is not just filling and yummy, you can also make extra and have it as one of your snacks later during the day. And it is the perfect post training snack as well. Just throw all of this in the blender; 2 bananas 1,5 dl water 1 tspn cinnamon fresh ginger, as much or as little as you´d like 200 gr strawberries (or any other berries ;-), it is strawberry season here right now, so….) 1,5 dl oat, soya or almond milk 2 tspns soy or rice protein powder   Swish! Enjoy!

Quick, easy, yummy healthy breakfast / snack

Sometimes we just need to get some “grubb” like we call it in Sweden in really fast. This is one of my favourite Yummy, Fun and Healthy breakfasts and snacks. There are even times when I am guilty of having a double portion of this for lunch as well, when time feels really scarce. What you do is basically to mix this together; 200 or 250 grams of cottage cheese handful of nuts pinch of cinnamon huge serving of your favourite berries or fruit, or whatever berries or fruit you have in your house 😉 Enjoy!

Waffles!

Waffles to me is one of the most Swedish dishes ever. Waffles instantly make me think of my grandmother´s kitchen, cold winter days in the snow  with friends and once we were cold to the bone after hours of pulka rides and snowball fights, arriving at grandma´s for freshly made waffles with jam and whipped cream. Waffles takes me back to days on the ski slopes in Sälen , stopping by the “Våffelstuga” – literally translated “the waffle hut” – to fill up with energy through , you guessed it , waffles , whipped cream and jam. Since then I found out –  8 years ago –  that I am allergic to gluten, plus I have cut out sugar entirely of my diet and dairy products rarely enter our household. Every time my friend Stina posts her healthy waffles she makes in the mornings on Instagram and Facebook I get instant home-sickness mixed with this urgent need to have waffles – which a has been going on for at least 3 years :-). Frozen water

Winter. That is what frozen water often represents to us. We see the crystal-covered, uneven surface of the ice taking shape as the temperatures drop and the mix of cold air and sparkling sunshine are working its magic. While the surface might be frozen, underneath it the water still flows, the fish are still swimming, the rocks on the bottom are still being shaped by the underwater currents. There is a stillness. A stillness which, when we sit down to listen to it, tells us to slow down, to embrace the darkness which comes in a little earlier every day, to light our candles and allow our attention to turn inwards. There is a yearning for warming, nurturing and nourishing foods. Foods which represents the holidays and festivities  already present in our calendars this very season; pumpkin, squash, (sweet) potatoes, leafy greens such as kale and green cabbage, mushrooms, apples, pears… While I lived in The Netherlands I fell in love with one of the staple national foods available there at this time of the …

Release, rest, reset

The trees are almost completely bare this time of the year in the south of Swedish Lapland where I am living at the moment. More or less totally naked. I can´t decide if they look dead or just totally cleansed, getting ready for hibernation or cocooning. Either way, something changed and there is no way denying it. “Change is the only constant in life” – wise words spoken by dear Heraclitus more than 2500 years ago. Words so evident once we open our eyes to take in the changes in nature – even if we live in the city there are trees and flowerbeds somewhere to be seen and birds to be heard – breathing in the air which changes it’s temperature and humidity as the seasons travel onwards, looking up at the sun to see where it sits today during our lunch break (if you ain´t taking a lunch break, how about giving that as a gift to yourself starting right now 😉 ?), just sharing space with what is moving around, above and …

Sunday we held our 3rd seminar / Health Food Brunch in the Yummy, Fun And Healthy Living seminar series at MICA´s Coffee bar in Haarlem –  us being Stephanie from Appetit Voyage and me. We would like to thank all of you who attended as well as Annemarie and Sophie for another morning of amazing food, drinks and atmosphere at their beautiful coffee bar. The main idea behind these Health Food Brunches and Seminars is that people get together , bringing any questions they could possibly have when it comes to food, nutrition and health and we are there to answer them all. We start the morning off with a theme to get the conversations and questions going, while staying open to being flexible to what the need is of the participants. This time the kick off topic was ”Food & Mood”.
